Carnitas (pulled pork)
Ingredients
4-6 lb pork butt/shoulder (I think bone in is best, but you can use either)
1 tbsp salt (more to taste)
1/2 tsp pepper
2 tbsp dried oregano (Mexican oregano is preferred)
1 tbsp cumin
1 large yellow onion (peeled, quartered)
8-10 cloves garlic (peeled)
2 limes (juiced)
3/4c. orange juice
3/4c. Mexican coke (must be the one with cane sugar)
Rinse and pat dry the pork with a paper towl and place into a crockpot/slowcooker. Add all the liquid ingredients first, then the garlic, onion, and bay leaves. Mix the herbs and salt together and sprinkle evenly over the pork. Cover and cook on low for 8-10hours, or high for 5-6 hours (until the meat is tender and falls apart).
Pairs well with: rice, beans, elotes. Make them into tacos with salsa, lime, onion and cilatro. Make them into taco bowls, or even toss them in bbq sauce for pulled pork sandwiches.
