Sausage & Cheese Quiche
Ingredients
1 lb. sausage (drain the fat if you use pork)
6 eggs
1 c. cottage cheese
1/2 c. whole milk
3 oz cheese (shredded) (Mozzarella, gouda, manchego are my top favorites)
1/2 tsp salt & pepper
Pre-heat the oven to 350°f. Meanwhile, fully cook your sausage and let it cool off on paper towels to soak up the extra fat. Briefly blend the eggs, cottage cheese, salt, pepper and milk together. Add the sausage and cheese to the bottom of the uncooked pie crust, then carefully pour the egg mixture over top. Place in the over for 40-45 minutes. It should not be giggly. Add cook time in 5 minute increments until cooked through. Let rest 15 minutes before cutting.
Notes: I use whollywholesome gluten free brand if I do not have time to make my own pie crust.
