Spicy Roasted Salsa
Ingredients
6 Tomatillos
1 Guajillo chili
1 Ancho chili
3 Garlic cloves
2 Serrano chilis
3 Habanero
½ Onion
12 Arbol chilis (tree chilis)
½ bunch cilantro
Salt to taste
Adobo seasoning to taste
Cut the oven on to 400 and roast the garlic, serrano, habanero, and onion. This will take about 10-15 minutes. While that is roasting, boil the tomatillos, ancho and guajillo until the tomatillos are cooked through (should be a paler green/brown tint to it). Once everything is done, add the arbol chilis to the hot roasting pan. These toast up very quickly and you do not want them to burn so put them on for no longer than 60-90seconds while transferring everything to a blender. Add all roasted and boiled ingredients together with the cilantro, salt, and adobo seasoning. Season to taste and enjoy!
