Sundry & Basil Chicken
Ingredients
1/4 c. balsamic vinegar
2 tbsp rice vinegar
2 tbsp coconut aminos
2 tbsp dijon mustard
3 tbsp Italian seasoning (split)
2 tbsp fresh basil OR 1tbsp squeeze bottle basil
3 garlic cloves (minced)
2 tbsp honey
6-8 sun-dried tomatoes (diced)
6-8 slices of cheese (feta, goat cheese, fresh mozzarella)
*Pairs well with: mashed potatoes, green beans, broccoli, creamed spinach, Caesar salad.
Cut the oven on 375°f. Trim the chicken thighs and season them with 2 tbsp of the Italian seasoning. In a large hot skillet, work in batches and cook 3-4 thighs (skin side down first) on medium-high to high (depending on your stovetop) for 3 minutes on each side. While the thighs are cooking, gather the remainder ingredients (excluding the cheese) into a small bowl. Once all thighs are seared, place in a 9x11-9x13 deep dish pan. In the same pan you cooked the thighs in, put it back on the stove and pour the bowl of ingredents in. Stir and let boil for 2 minutes. Pour the sauce on top of all the thighs. place a slice of cheese on top of each thigh and bake uncovered for 35-45 minutes. Once fully cooked, let rest for 5-7 minutes.
* I use the sauce as a gravy for my potatoes
*Thighs are very forgiving. I prefer mine to register at 175-185°f before taking them out of the oven. 165°f is safe and perfectly and Be clear, be confident and don’t overthink it.
