Bourbon Chicken
Ingredients
2lbs boneless skinless chicken thighs
1/4 c. oyster sauce
1/4 c. bourbon
1/2 c. soy sauce
1 c. water
1/2 c. unpacked brown sugar
10 cloves garlic (minced)
1 tablespoon freshly grated ginger
1 teaspoon chili flakes
salt
pepper
Salt and pepper all the thighs and grill them on high heat (you want a nice charr on the outside). Cook them for 4 minutes on each side (do not worry if they’re undercooked), they’ll cook again in the sauce, the idea here is just to get that charred flavor. After the chicken has been charred, let rest while making the sauce.
In a deep sauce pan, sauté the garlic, ginger, and chili flakes in 2 tablespoons of oil for a few minutes. Add the oyster sauce, bourbon, soy sauce, water and brown sugar. Stir to combine and while it is coming to a boil, diced up the chicken into chunks. Toss them and any juices from the chicken into the sauce and continue cooking. Cook over medium-high heat for 15-20 minutes. Stir every few minutes until the sauce gets thicker.
Pairs well with: fried rice, sautéed veggies, sweet carrots, yum yum sauce.
