Easy Empanada Dough
Ingredients
2cups flour
1 tsp salt
1/2tsp baking powder
1 stick butter (8tbsp) (sliced)
2 eggs
water
In a large mixing bowl combine the flour, salt and baking powder. Mix together and then add the butter. Mix and break apart the butter until it feels more like a grainy texture. Make a well in the center of the dough and put the eggs inside. Whisk the eggs and add 3tbsp of cold water. Mix the dough with your hands and add 1tbsp of water at a time if you need more. The dough should NOT be crumbly and will be slightly sticky.
Place the dough covered in the fridge while you are getting the filling ready.
When ready, cut into the size ball you want (mine fit nicely in the palm of my hand) roll it out on a floured surface. They should be thin (less than 1/4th of an inch). Place a few tablespoons of your filling (depending on how big you made them), fold the dough over and pinch and fold the ends to seal it up.
Fry in a 1/4cup of oil on medium-high heat in a shallow pan. Each side should take roughly 2 minutes. Once golden brown on each side, your empanadas are done!
Notes: you can use any filling! Picadillo, cheese and spinach, chorizo and potato, even apple pie filling! Make sure your filling is warm but not hot.
